Ingredients for a mold of approximately 24 cm in diameter
250 g Philadelphia
200 grams of whipping cream
12 grams of sheet gelatin
1 pack type of digestive biscuits
eighth 70-grams of butter
4-5 tablespoons of sugar
berries (I used frozen ones)
Finely chop cookies (I have them blended in the mixer), gently melt the butter and add the above to biscuits chopped mix everything.
Mash this mixture on the bottom of a springform pan previously coated with baking paper and put it in the refrigerator. In the meantime, put the sheets of gelatin in cold water because they soften (about 10 minutes).
Whip cream cold from the fridge, mix sugar and Philadelphia.
Squeeze sheets now softened gelatin and dissolve in a small saucepan over low heat a few tablespoons of milk, let cool and mix the mixture of cream and cheese. Spread the cream mixture so obtained on the biscuits and place in refrigerator for at least 3-4 hours.
Place a handful of fruits of forest in a saucepan with a tablespoon of sugar and cook about 5 minutes, if you want you can blend to get a thicker sauce I prefer the whole fruit, as shown in the picture.
